Peanut Butter Pie

My dad has a favorite joke:

I only like 2 kinds of pie. 

-(wait for it)-

Hot pie and cold pie.

Clearly I did not get my sense of humor from him. Since we have all heard this one so many times, this is where you insert the eye roll followed by a head shake while looking down at the floor in shame.





But the best part about hearing this line,
is that it typically means mom has been
busy making pies. And she is well known
as being an amazing baker. So this will be
one of many passed down pie recipes from
her. It is seriously, the best peanut butter pie
you will ever eat.

Peanut Butter Pie
  • 1 c powdered sugar
  • ½ c peanut butter
  • 1 Baked 9" pie shell
  • ¼ c cornstarch
  • ⅔ c sugar
  • ¼ tsp salt
  • 2 c scalded milk
  • 3 egg yolks, beaten
  • 2 Tbsp butter
  • ¼ tsp vanilla
  • 3 egg whites
  • 6 Tbsp sugar 
Combine powdered sugar and peanut butter; mix with fork until mixture resembles course meal. Sprinkle ½ of the mixture in pastry shell; set remaining aside.

Combine remaining ingredients except egg whites and 6 Tbsp sugar in a saucepan
Cook over medium heat until thickened, stirring constantly
Spoon filling over peanut butter layer in the pastry shell

Beat egg whites until stiff
Add 6 Tbsp sugar & continue beating until very stiff
Spread over filling

Sprinkle remaining ½ of the peanut butter mixture over meringue

Bake at 325 for 20 minutes until meringue is firm and lightly browned

Allow to cool and store in the fridge (but don't be surprised if it disappears in there)
